- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups enchilada sauce
- 2 cups shredded cheddar cheese
- 8 corn or flour tortillas
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes with green chiles
- 1 medium onion, diced
- Fresh cilantro (optional)
Instructions
- Preheat oven to 350°F (175°C) and spray a large baking dish with nonstick spray.
- In a skillet over medium heat, sauté the diced onion for about 5-7 minutes until translucent.
- In a bowl, mix shredded chicken with black beans and 1 cup of enchilada sauce.
- Layer tortillas at the bottom of the baking dish, followed by half of the chicken mixture, more sauce, and cheese.
- Repeat layers with remaining tortillas, chicken mixture, sauce, and top with cheese.
