  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red or yellow curry paste
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1 bell pepper, chopped (any color)
  • 2 green onions, sliced (for garnish)
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: peel and devein the shrimp, chop the bell pepper, and mince the garlic and ginger.
  2. In a large skillet over medium heat, add a drizzle of oil. Sauté minced garlic and ginger until fragrant (about 1 minute).
  3. Stir in curry paste until well combined with aromatics.
  4. Slowly pour in the coconut milk while stirring until blended.
  5. Add shrimp and bell peppers; cook until shrimp are pink and opaque (about 5-7 minutes).
