  • 4 medium Russet potatoes (about 8 oz each)
  • 4 tbsp unsalted butter
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped chives or green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Wash and dry the russet potatoes.
  2. Poke holes all over each potato using a fork to allow steam to escape during baking.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes until soft when gently squeezed.
  4. Slice each potato down the middle without cutting through; fluff the insides with a fork.
  5. Add butter, sour cream, cheese, bacon bits, salt, and pepper into each potato; mix well.
  6. Return stuffed potatoes to the oven for an additional 10-15 minutes until heated through and cheese is melted.
